My boyfriend found these on a website and asked me to make them. I was a little apprehensive as I love custard creams, but noticed these didn't have a filling and I can be funny about custard, but they are very nice indeed! They taste like custard creams, but without the filling!
You will need:
> 2-3 baking trays, lined
> Various cookie cutters
> Rolling pin

Recipe from Biltong Direct
Ingredients:
> 250g butter
> 175g caster sugar
> 2tsp vanilla extract
> 325g plain flour + extra for dusting
> 2tsp baking powder
> 6tbsp custard powder (I used Birds Instant Custard Powder)
Method:
> Preheat oven to 180 degrees C and line the baking trays. Have your cookie cutters ready, I chose these ones :)
> I love my cupcake one! :P Anyway, place the butter and sugar in a large bowl and beat until light and fluffy. Add in the vanilla extract and mix again briefly.
> In a separate bowl, sift the flour, baking powder and custard powder together.
> Add in the dry ingredients and mix until a dough forms, it's quite a soft dough.
> Flour the work surface and turn the dough out.
> Flour the rolling pin and then roll out to about 50mm thick. Cut your shapes out and place them on the baking trays, repeat the rolling and cutting process until you've used all the dough.
> Look at this poor fellow, has a busted foot as I failed at picking him up :(
> Place in the oven and bake for 15-20 minutes, until lightly browned around the edges.
> Will keep in an airtight container for a good few weeks :)
