Don’t you just love a good smoothie on a hot day? Or after a workout? I do, but I always find myself making the same flavours; strawberries, mango, banana. So, I decided to try a Raspberry Lime one and boy is it good!

Every time I have limes I think they’re my favourite citrus fruit. Then I have lemons and I think lemons are the best thing ever. I’ve come to the conclusion I love them both and I need to start putting lime zest/juice into things more often. Case in point: smoothies.

This Raspberry Lime Smoothie is simply amazing. I’ve had raspberry smoothies before, but that hit of lime elevates it to the most incredible smoothie ever.

Smoothies with strawberries? Amazing, add in some lime? SUBLIME.

Raspberry smoothies – on their own they’re nice, add in lemon or lime juice and it’s like all the flavours come alive. It’s incredible how one simple ingredient can make such a difference.

It’s not just smoothies. Salmon is my favourite fish, but add a squeeze of lemon or lime juice, add some herbs and it completely changes what could have been a bland dish.

Don’t even get me started on Lemon Chicken. It’s my favourite dish in the entire world and I would eat it every day if I could. I’m so lucky to have married someone who makes authentic Lemon Chicken just like you get in Chinese restaurants.

Back to smoothies as chicken was a tangent haha! What fruits do you like to make into smoothies? I’ve made so many different flavours over the years and I love trying new flavour combinations.

I also love that with smoothies you blitz the whole fruit rather than juicing, where the skin and a lot of the nutrients are waste.

My favourite time to have a smoothie is after a workout because my body is screaming at me and I need energy. A smoothie lifts me straight back up and I genuinely feel like I’m doing good to my body.

Speaking of exercise, it’s become more difficult in recent months to keep up with my workouts. I have to modify a lot so I don’t put any strain on my back. I keep telling myself “you might be modifying, but you’re still moving” but it annoys me sometimes. I feel like I live on a knife edge. I have to do some form of exercise so as not to get stiff, but when I exercise my back hurts so then I have to rest after.

It’s frustrating, but I am learning every day what my capabilities are and it’s a sliding scale. Some days are better than others, but one thing that I’m really struggling with right now is tiredness. When I first got diagnosed with arthritis, I had no clue chronic fatigue was a part of it, but it is and it is tough. The thing is, it’s not cured by sleep which seems mad, but I can sleep for 11 hours and still wake up tired to my core.

Do any of you suffer with arthritis? Any tips for coping with the tiredness, I’d love to know!

Raspberry Lime Smoothie

This Raspberry Lime Smoothie is perfect for cooling down on a hot day or as a post workout pick me up. It's sweet, tart, fruity and full of good ingredients!

Servings 2

Ingredients
  

  • 2 cups (250g) frozen raspberries
  • Juice of 2 small limes
  • 1 cup (260g) raspberry yoghurt, low fat or full fat; I used Muller light
  • 1/2 cup (120ml) milk of your choice, I used skimmed milk; you can use almond, soy etc
  • Lime slices and fresh raspberries to garnish, optional

Instructions
 

  • Place the frozen raspberries, lime juice, raspberry yoghurt and milk into your blender and pulse until smooth.
  • Divide between two glasses, garnish with a fresh raspberry and lime slice, if you want, and enjoy!
  • Raspberry Lime Smoothie is best enjoyed on the day you make it, but will keep in the fridge for 1 day.
