Maple Apple Overnight Oats

These Maple Apple Overnight Oats are the perfect make ahead breakfast; with two ways to make them, you're bound to fall in love with these creamy, sweet and fruit oats!

Ingredients

  • 3 cups (240g) rolled oats, not quick cook
  • 1 large/2 medium apples, peeled, cored and sliced into small chunks
  • 1/3 cup (113g) maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1 1/2 cups (360ml) milk, I used skim

Instructions

  • Variation 1: Place oats, apples, spices and salt into a medium sized bowl and stir until well combined.
  • Add in the milk and vanilla extract and stir until all the oats are coated in milk; cover the bowl with cling film and place in the fridge for at least 6 hours, overnight if possible.
  • Variation 2: Place oats, spices and salt into a medium sized bowl and stir briefly. Add in the milk and vanilla and stir until everything is combined.
  • Cover the bowl with cling film and leave in the fridge for at least 6 hours, overnight if possible.
  • The next morning, place apples and maple syrup into a small saucepan over a low heat, stirring frequently so the maple syrup doesn't stick/burn.
  • Bring to a boil and cook until the apples are fork tender, about 10 minutes. You can either leave it to cool, or warm up some oats and then spoon the maple apple mixture on top.
  • The other way to serve this is to swirl the maple apple mixture through the oats; it's completely up to you!
  • Maple Apple Overnight Oats will keep in the fridge, covered, for 4 days. If you cook the apple, keep that mixture separate in a little pot in the fridge. Serve oats straight from the fridge, or warmed through for 1 minute in the microwave
