These Peach Parfaits are made with creamy Greek yoghurt, sweet peaches and crunchy granola; light and tasty, you decide whether these are breakfast or dessert!
Place double cream into a medium sized bowl and whisk until soft peak stage. You want it to hold its shape when you pull the whisk out, but for the peak to fall over when you pull the whisk out.
Add in the Greek yoghurt, agave/honey and vanilla extract and fold in until well combined.
Take 2 mason jars and place about 1/3 cup of the Greek yoghurt mixture into the base of the jar.
Place 1/4 of the peach chunks on top of the yoghurt mix and then sprinkle with granola.
Repeat the layers; first the yoghurt mix, then peaches, then granola until the jars are full.
Serve immediately or cover and keep in the fridge for 2 days.
