Ingredients

  • 2 cups (160g) rolled oats, not quick cook
  • 1/2 cup (100g) light brown sugar
  • 2 tsp ground cinnamon
  • 3 cups (720ml) milk
  • 3 cups (720ml) water
  • 1/4 tsp vanilla extract
  • Applesauce, to serve

Instructions

  • Place the oats, sugar and cinnamon into your slow cooker and stir briefly. Add in the milk, water and vanilla extract and stir to ensure all the oats are coated in liquid.
  • Place the slow cooker on low heat for 7-8 hours. If your slow cooker runs hot like mine, leave it on the "keep warm" setting instead of low. I cooked this on low for about 3 hours, it started burning around the edges, so I turned it down to "keep warm" for the final 4 hours and it turned out perfectly.
  • Do not stir the oatmeal too much, you can give it a quick stir if you notice it sticking around the edge, but I would say only stir it a few times during the entire cooking period. You can make this overnight if you want, but I would not advise leaving any appliances unattended all night.
  • The oatmeal will become thick and creamy and the oats soft when it's cooked. To serve, divide between bowls and top with 1-2tbsp of applesauce.
  • Slow Cooker Oatmeal will keep in the fridge, covered, for 5 days. To reheat, place in a microwave safe bowl and microwave for 2-2 1/2 minutes. (It depends how powerful your microwave is).
